This is actually very similar to my quick and easy pancake recipe, with a few slight changes of course.:) I thought of it when I first put bananas in the pancake batter, because the taste reminded me a lot of banana muffins, so I tried this recipe and it was great!

Ingredients
- 1 cup brown rice flour
- 1 cup oat flour
- 2 1/2 t. baking powder
- 1/4 cup Honey or your favorite healthy sweetener
- 1/4 t. salt
- 1 cup water
- 4 egg whites
- 1 T. Fat Free yogurt
- 1 t. vanilla
- 3 medium mashed bananas
- Vegetable oil spray for coating pan
Instructions
- Preheat oven to 350.
- In a large bowl mix all ingredients together. Spray a muffin tin with cooking spray, and fill each hole about three quarters of the way. Bake for twenty minutes or until done.
- Enjoy!!
