Healthy and Delicious Banana Muffins:

This is actually very similar to my quick and easy pancake recipe, with a few slight changes of course.:) I thought of it when I first put bananas in the pancake batter, because the taste reminded me a lot of banana muffins, so I tried this recipe and it was great!

Ingredients

  • 1 cup brown rice flour
  • 1 cup oat flour
  • 2 1/2 t. baking powder
  • 1/4 cup Honey or your favorite healthy sweetener
  • 1/4 t. salt
  • 1 cup water
  • 4 egg whites
  • 1 T. Fat Free yogurt
  • 1 t. vanilla
  • 3 medium mashed bananas
  • Vegetable oil spray for coating pan

Instructions

  1. Preheat oven to 350.
  2. In a large bowl mix all ingredients together. Spray a muffin tin with cooking spray, and fill each hole about three quarters of the way. Bake for twenty minutes or until done.
  3. Enjoy!!
