Healthy No-Bake Chocolate & Pumpkin Swirl Protein Bars:

I don’t know about you, but I have an obsession for Quest Bars! They are SO good, and one look at the nutrition facts make my head spin, like HOW do they make such good stuff with so few grams of fat and carbs and so much fiber and protein?!?! I don’t know…but, moving on… they are WAY expensive, and so I decided to make my own, you’ll probably see more flavors pretty soon, and I’m “experimenting with baking some, but so far I haven’t had what you would call “blog-worthy” success. But here’s this awesome recipe, so healthy, and no bake, plus they taste AMAZING too! Get better than that! (Or can you?) 🙂

Ingredients

  • For the Chocolate part:
  • 1/2 cup refined coconut oil
  • 1/2 cup whey protein powder
  • 1/4 cup oat fiber
  • 2 T. fat free plain yogurt
  • 1/4 cup cocoa
  • 1/4 cup honey
  • For the pumpkin part:
  • 1/2 cup coconut oil
  • 1/2 cup whey protein powder
  • 1/3 cup oat fiber
  • 1/2 cup 100% pure canned pumpkin
  • 1/4 cup honey
  • 11/2 t. cinnamon
  • 1/4 tsp. nutmeg
  • 1/8 t. ginger
  • 1/4 t. allspice

Instructions

  1. For the chocolate part:
  2. Melt the coconut oil, and mix the rest of ingredients with it, set aside while you make the pumpkin part.
  3. For the pumpkin part:
  4. Melt the coconut oil, and add the rest of the ingredients, stir well. Drop some of the chocolate and some of the pumpkin dough into a parchment lined 8×8″ pan. Continue until all of it is in the pan, and swirl with a knife.
  5. Set into the refrigerator to chill until firm. Slice and enjoy!!
