These chocolate cupcakes taste seriously like the “real thing” only these are perfectly healthy. Whoever heard of a cupcake that’s good for you? Well-if you haven’t heard of it before, you’re hearin’ it now, so get in the kitchen and whip up a batch of these. Cuz not only are they healthy, their easy to make too!! WIN!
Healthy Double Chocolate Cupcakes
The chocolate chips are optional…but ya might wanna throw em’ in anyway!
To prepare your muffin tin, Place cupcake liners in each hole, I spray them with a little cooking oil too, because they tends to stick to the paper some.
Mix first four ingredients in a large bowl.
In a separate bowl mix the boiling water and coconut oil, until melted. Add the rest of ingredients (except the chocolate chips) to the wet mixture, then pour into the dry ingredients. Whisk until smooth, then add the chocolate chips last and stir. Pour into prepared muffin tins, till about 3/4 of the way full. Bake for 15-20 minutes or until done.
