PUUUUMPKIN… I might sound weird, but I absolutely LOVE pumpkin desserts! Anytime of the year too! And healthy??!? OK, I’m sold! I tend to “over” spice my pumpkin in some (ahem) “helpful” people’s opinion… is there really any such thing?…I don’t, maybe… but anyway, just start with less spice and then work up to what it calls for in here, just so you can be sure you’re not putting too much for your taste. 🙂
Mix all dry ingredients together, add the coconut oil and cut it into the oats, as you would with a regular pie crust. Once the coconut oil is distributed evenly, add the ice water until it forms a ball. Press into a 8″8″ pan lightly oiled. Bake at 350 for about twenty minutes.
For the filling:
Mix all ingredients together in a large mixing bowl. pour into baked crust and place back in the oven for another 45 minutes or until firm.
