
Quick & Easy Pancakes:
I was planning on just sticking to my first pancake recipe, (Energizing waffles/pancakes) but I got to thinking that it really uses like, A HECK of egg whites, and I wanted to make a quicker recipe with fewer ingredients, but just as good tasting, so I put this one together. It’s definitely ranked WAY up there in my brother Jonah’s opinion, I have to make them when he’s not around if I want any left by the time I’m done! 🙂

Ingredients
- 1 cup brown rice flour
- 1 cup oat flour
- 2 t. baking powder
- 3 T. Honey or your favorite healthy sweetener
- 1/4 t. salt
- 1 cup water
- 3 egg whites
- 1 T. Fat Free yogurt t. vanilla
- Vegetable oil spray for cooking
Instructions
- In a large bowl mix all ingredients together. Spray a cast iron skillet with cooking spray, and heat on medium. When pan is completely hot. Cook pancakes on one side until bubbles form on the top, then flip and cook until pancake is browned on the other side too. Remove from pan and enjoy with sugar free syrup, honey etc…
Notes
So, I was making these one day, and Jonah had a brain storm…or so he called it, and thought of adding bananas to the batter, and making banana pancakes. I tried it and they were amazing. (Of course, I don’t have any left, because he ate it all, and…well, I helped that time:) But all that to say, a real good revision to this recipe is adding two large bananas to the batter! Believe me, you’ll want to try it! My banana hating younger brother even liked it! 🙂 So that’s sayin’ somthin’!! Save
