Healthy Pizza Snacks:

This recipe makes only one mini pizza, but I normally make a lot and freeze them, then pop one in the oven for a snack, they heat up really well. These are like, the best snack ever! I only eat one a day (if that) so I don’t recommend going over one or two, because of the extra calories these babies carry! šŸ™‚ Also if you want to check out my sugar free pizza sauce, click here.

  • 1 small or medium high fiber low carb tortilla
  • 2 T. sugar free pizza sauceĀ 
  • 3 T.- 1/4 cup cheese
  • sprinkle of cubed hamĀ 
  • 4 pepperonisĀ 
  • sprinkle of diced olivesĀ 
  • sprinkle of chopped onionsĀ Ā 
  • any other healthy pizza toppings that you like
  • 3 T. melted coconut oil


  1. Preheat the oven to 450 degrees. Brush the coconut oil lightly on both sides of the tortilla and place it on a baking sheet and in the oven for about 3-5 minutes or until it gets golden on the top. Flip over and repeat on other side. Remove from the oven and spread on the pizza sauce, then the cheese and then all your other toppings. Place it back in the oven until the cheese melts and it gets hot all the way through. Enjoy!!
